Evelio comes from a close-knit, coffee-producing family, who are working hard to develop agricultural projects for coffee producers in their community. Along with having a great passion for utilising agricultural practices that contribute to the conservation and preservation of the environment, Evelio also teaches roasting and sensory topics to other producers in his community
Once picked, this coffee goes on a 15-day journey where it is processed using traditional methods, just as the old coffee growers used to, however with this lot, Evilio chose to double ferment. The coffee is fermented for a total of 70 hours, before being given a single light wash which allows the coffee to keep as much mucilage as possible (contributing to the sweetness of the cup) as well as helping to keep water waste low.
